  • Crock Pot (3 to 5-quart)

Ingredients
  

  • 1 pound ground beef
  • 32 oz Velveeta cheese cubed
  • 2 cans (10 oz each) Rotel diced tomatoes with green chiles undrained

Instructions
 

  • In a large skillet, cook the ground beef until browned. Drain off any grease.
  • Cube the Velveeta cheese into small chunks for faster melting.
  • In a 3 to 5-quart crock pot, add the cheese, cooked beef, and both cans of Rotel.
  • Cover with the lid and cook on LOW for 2 hours or HIGH for 1 hour.
  • Stir occasionally to ensure everything blends well.
  • Once fully melted, switch to WARM and serve with tortilla chips or veggies.

Notes

Add ½ cup milk if the dip becomes too thick.
Spray the crock pot with non-stick spray for easier cleanup.
For spicier flavor, use hot Rotel or add a splash of hot sauce.
